Description:
This study reviewed the development of vegetarianism and veganism. Based on the care ethics of veganism, the study proposed a theoretical framework of vegetarian-friendly campuses and selected the campus of Education University of Hong Kong (EDUHK) as a case study. Through interviews with vegetarian students and canteen staff, the study found that the campus gives care to its internal members as a vegetarian-friendly campus, but fails to care about the distant others at a broader scale. It also has challenges in dealing with the meat-centric campus culture, the limited capacity to provide more vegetarian-oriented services, and the "Yes, but" dilemma of its vegetarian food. Although it is not easy, it has opportunities and advantages in building a vegetarian-friendly campus based on its geographical location and diversified student population
